I completed my food service management rotation in 3 facilities: a university, a school district, and a long term care facility. It was interesting to see the differences between each of the facilities. I was able to complete at the required experiences, some of which I was able to complete multiple times in multiple ways.
I spent around 7 weeks at a local university. While there I completed 3 projects: a process improvement project, a theme meal project and a schedule project. I was also able to observe all 4 dining facilities, all 4 grab-and-go locations and all 4 retail locations. I helped conduct internal audits, as well as participated in an audit conducted by a third-party auditor. I also taught 2 classes during my time there, one to housing and dining services staff and one to dining services staff.

I spent 4 weeks at a local school district. I helped to update the nutrition information sheets, as well as the allergen information sheets. I helped in one of the production kitchens as well as serving lunch to kids. I was also able to help with some food tastings and two "Rainbow Days."

I spent 3 weeks at a one of the largest long term care facilities in the state. I was able to shadow the Executive Sous Chef at the facility. I was able to help with completing orders as well as doing [ ] for food. I was able to do food preference surveys for newly admitted residents.
